Method
- Cut the Pork Skins into pieces approximately 10mm wide
- Soak in brine for upo to 24 hours
- Pour the salt water away and rinse under cold running water until all the brine has been washed away
- Pre-heat the oven to 200C, GM6 and pre heat a heavy iron dish. Put in the dish the pork skin pieces. They should sizzle and the liquid boils off quickly
- Cook until brown and crisp
- Eat warm and any left over place on paper to drain off excess fat and place in an air-tight container.
