Pork Tenderloin

Ingredients

  • 1 Pork Tenderloin
  • 1 or 2 tsps of spices or seasoning
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp vegentable oil

For the Seasoning

  • 1 tsp smoked paprika 
  • 1 tsp ground cumin 
  • 1/2 tsp garlic powder 
  • 1/2 tsp dried oregano 
  • 1/4 tsp cinnamon

Method

  1. Heat the oven to 220C
  2. Dry and season the pork with salt and pepper
  3. Place the oil in the pan and heat until hot then fry the tenderloin until golden brown
  4. Wrap the tenderloin loosely in foil and sprinkle with any remaining spices.
  5. Bake in the oven for 1 hour
  6. Rest for 10 minutes.
  7. Cut the tenderloin into diagonal slices and serve.
  8. Great served with Bramley Apple Sauce, Sage and Onion stuffing, Green vegetables and Mashed Potatoes

Tenderloin is a very accommodating meat for spices and seasoning.  Try it with other flavourings and sauces.
