Hot Bacon and Endive Salad

 

Ingredients

  • 120 ml of sunflower oil
  • 4 slilces of smoked streaky bacon without the rind and diced
  • 2 slices of white bread, crusts removed and diced
  • 1 head of curly endive, outer leaves removed
  • 2 tbs whitte wine viegar
  • 1tsp Dijon Mustard
  • salt and pepper
  • 1 large garlic clove sliced

Method

  1. Wash the lettuce or endive and allow to drain.  Then pat dry with kitchen rolls.
  2. Put the sunflower oil in the pan and fry the bacon.
  3. Set the bacon aside and keep warm.
  4. Fry the bread until crisp and brown.
  5. Arrange the endive in a bowl.
  6. To make the dressing place the vinegar, salt and pepper galic and mustard in a pan and heat.
  7. When ready to serve place the bacon and fried bread on the endive and pour on the dressing.
  8. Serve immediately.
