Cream of Asparagus Soup

 

 Ingredients

  • 2 tbsp Olive Oil
  • 1 onion finely chopped
  • 400g Asparagus finely chopped
  • 500ml hot chicken stock
  • 4 tbsp double cream or Elmlea
  • salt and freshly ground black pepper

 Method

  1. Heat the olive oil in a saucepan over a medium heat.  Add the onion and fiy for 4 minutes until soft but not browned.
  2. Add the asparagus and cook for another 2 minutes.
  3. Add the stock and the salt and pepper and simmer for 5-7 minutes until the aspagus is soft.
  4. Add the cream and use a hand blender until smooth.
