Banana Crumb Muffins

 

 Ingredients

  • 225g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 bananas, mashed
  • 150g white sugar
  • 1 egg, lightly beaten
  • 75g melted butter

 

 Ingredients for the topping 

  • 75g brown sugar
  • 2 tbsp plain flour
  • ⅛ tsp ground cinnamon
  • 1 tbsp butter

 Method  

  1. Preheat the oven to 190  C.
  2. Lightly grease 10 muffin cups, or line with muffin papers.
  3. In a large bowl, mix together 225g of plain flour, bicarbonate of soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  4. In a small bowl, mix together the 75g of brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  5. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

 

This recipe was given to me by Jeanne Hill but it was in this silly Yanky measurements - cups, that only the Americans and wanna be's understand  I've converted it to international standards, similarly with the temperature of the oven.  Drop it down a few degrees for a fan assisted oven.  Jeanne described these as being YUM! and I cannot disagree.
