Candid Mixed Peel

 

Ingredients

  • 2 Oranges

  • 2 Lemons

  • Sugar

Method

  1. Put 100ml of water in a pan and add 100g of sugar.

  2. Gently heat to disolve the sugar.

  3. Squeeze the juice from the fruit and retain for other use.

  4. Slice and chop the skins.  I is not necessary to remove the pith.

  5. Place in the heated water and sugar.

  6. Simmer for 30 minutes until translucent and soft.

  7. Leave to cool in the syrup and then spread on grease proof paper to cool.

  8. Place in an airtight container in the fridge.
