Snickerdoodles

Ingredients

  • 110g butter (softened)
  • 170g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 160g plain flour
  • 1 tsp cream of tartar
  • 1/4 tsp salt
  • 2 tbsp sugar
  • 2 tsp ground cinnamon

Method

  1. Cream the butter and sugar and then beat in the egg followed by the vanilla extract.  Note sprinkle a little flour over the egg as this helps to stop it curdlying.
  2. Mix the flour, baking powder, cream of tartar and salt.
  3. Add the dry ingredients to the butter, sugar and egg mixture.
  4. Form the dough into 30cm balls, roll them into a mixture of sugar and cinnamon and place on a greased baking sheet.
  5. Bake in a preheated over at 180C Fan or 190C.  8-10 minutes until golden.

This recipe was given to me by a Canadian friend (Jeanne Hill) who was cruel.  The were so yummy I ate the lot in one day.  I am diabetic!
