Gingersnap Cookies

Ingredients

  • 240g plain flour
  • 2 tsp baking soda
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 225g butter, room temperature
  • 100g sugar
  • 1 egg
  • 80g molasses
  • 50g coarse grain sugar (optional)

 Method

  1. Mix the flour, baking soda, ginger, cinnamon, cloves and salt in a bowl.
  2. Cream the butter and sugar in a mixer.
  3. Beat in the egg followed by the molasses.
  4. Add the dry ingredients into the wet.
  5. Form the dough into small balls, optionally rolling them in sugar and placing them on a baking sheet.
  6. Bake in a preheated 180C oven until lightly golden brown on the edges, about 8-10 minutes.
  7. Optional 42g chopped candied/crystallized ginger.
