Northern Parkin

Ingredients

  • 120 g Flour
  • 2 tsp Ginger
  • 170 g Rolled Oats
  • 60 g oz Butter or Margarine
  • 60 g Dark Brown Sugar
  • 225 g Black Treacle
  • 1 Egg
  • Milk

Method

  1. Mix Sugar & Butter and cream until light.
  2. Mix in Flour, Ginger & Oats
  3. Melt the Blackc Treacle and mix with the other ingredients
  4. Beat in Egg
  5. Add Milk to make to a mixture that will just pour
  6. Grease a Ring Mould & pour in mixture
  7. Microwave at 75% for 10 minutes

This delicious recipe came from Enid and Julian Weaver who made it for the Wine Tasting BBQ in June 2016.  Enid says it imporves if left for 2 days but she says she has never managed to resist eating on the day it is made.
