Salad Nicoise

Ingredients

  • 225 can of tuna
  • 225g of cooked French Beans
  • 400g can of sweet corn
  • 3 tbsp of finely diced red pimiento
  • 100g sliced mushrooms
  • 400g of vine tomatoes
  • 4 or 6 boiled eggs
  • 12 black olives
  • French Dressing
  • 1 red onion sliced into rings
  • lettuce (mixed leaves)

But I also like to add:

  • 50g anchovies the saltier the better
  • cold dried new potatoes
  • red pepper sliced

Method

  1. Boil the beans until there is still some crunch left in them.  Plunge in cold water to halt the cooking.  Drain well.
  2. Boil the potatoes and plunge them in cold water to halt the cooking.
  3. Drain the sweet corn from the can.
  4. Boil the eggs and cool in water.
  5. Place the Tuna in the bottom of a large salad bowl
  6. Add the other ingredients in layers leaving the anchovies and eggs.
  7. Pour on the mayonnaise.
  8. Serve with French Dressing.
