 Parnip Soup

Ingredients

  • 3 large parnsips
  • 1 onion
  • 1 courgette
  • 1 potatoe
  • 3 tbsp olive oil
  • 2 tbs creme
  • 2 ltrs chicken stock
  • 60g of foie gras
  • grated nutmeg to taste
 

Directions

  1. Fry the sliced onions in olive oil for 3 minutes or until soft
  2. cut the other vegetables into 1" cubes and saute for 5 minutes
  3. add the nutmeg and the stock
  4. simmer for 25 minutes
  5. liquidise until smooth
  6. add the creme and foie gras just before serving

In poorer times when Brittany was populated mainly by peasant farmers parnsips were regarded as survival food and therefore only eaten by the poor.  Until the Brits came to France Parnips were not a popular food but now they are available in large supermarkets, often imported from the UK.
