Courgette Soup

Ingredients

450 g Courgettes trimmed and sliced

30 g butter

225 g onions peeled and sliced

225 g Cox's apples peeled and cored and chopped

115 g carrots

850 ml pints chicken stock

1 teaspoon sugar

120 ml double cream

salt

pepper

Method

  1. Melt the butter in a large saucepan. 
  2. Fry the onions until soft.
  3. Add the courgettes, apples and carrots, and cook them over medium heat for a few minutes.
  4. Add the stock and simmer for about 30 minutes or until the vegetablesare soft.
  5. Spin the contents of the pan until smooth.
  6. Season with salt and pepper and add the sugar.
  7. Gently stir in the cream and serve immediately with croutons or crusty bread.
