Method
- Place 4 fresh farm eggs in the fridge overnight.
- Boil a pan of water and turn off.
- Crack the eggs into separate cups and add a little lemon to each
- Gently pour each egg into a seive and allow the watery bit of the egg white to drain off
- Gently place each egg in the water and allow to cook
- If cooking several eggs, eg 4, then turn the heat on very very low. Ensure that bubbles do not rise as this will break up the egg white.
- Serve immedigately with buttered toast.
