A Perfect Poached Egg

Method

  1. Place 4 fresh farm eggs in the fridge overnight.
  2. Boil a pan of water and turn off.
  3. Crack the eggs into separate cups and add a little lemon  to each
  4. Gently pour each egg into a seive and allow the watery bit of the egg white to drain off
  5. Gently place each egg in the water and allow to cook
  6. If cooking several eggs, eg 4, then turn the heat on very very low.  Ensure that bubbles do not rise as this will break up the egg white.
  7. Serve immedigately with buttered toast.
