Artichokes with Vinaigrette dressing.

Ingredients to serve 4

 

  • 4 globe artichokes
  • 1/2 tsp salt

    Vinaigrette

  • 1 clove of garlic crushed
  • 1/2 tsp Dijon mustard
  • 2 tablespoons red wine vinegar
  • 6 tbsp olive oil
  • 3 tbsp parsley- finely chopped
  • 3 tbsp chives - finely chopped
  • 1 tbsp capers
  • 1 tbsp gherkins - finely chopped
  • 1 hard boiled egg - finely chopped
  1. cut the stalk and outer leaves off the globe and rub the cut surface with lemon joice
  2. plunge into salted boiling water and simmer for 30 minutes
  3. combine the vinigraitte ingredients in the order given
  4. serve the artichokes either hot or cold with a small dish of dressing

A personal favourite of mine, looks impressive, tastes great but not everyone can cope with the dressing or the effort needed to eat.
