Tabouli Salad

Ingredients

  • 2 bunches of flat parsley roughly chopped 
  • 250g chopped tomatoes
  • half a cucumber peeled and chopped
  • 30 chopped mint leaves
  • 3 spring onions
  • 50 - 100g of burgul or burghul
  • juice of two lemons
  • 3 tbsp olive oil
  • 1/2 tsp of paprika
  • salt and freshly ground black pepper to taste
  • a couple of handfulls of lettuce leaves

Method

  1. Place the burgul in a bowl and cover with tepid water and leave for 20 minutes.
  2. Drain the water and press the burgul to remove excess water.
  3. Mix all the other ingredients in a bowl.
  4. Add the burgul and mix again.
  5. Finally add the salt.

If you cannot easily get burgul then you could use Couscous but it will not be the same.  Excellent served with Lemon and Garlic thin steaks.
