making good gravy

Ingredients

  • onion
  • carrot
  • stick of celery
  • plain flour
  • stock

Method

  1. roast the meat over sliced onion, finely chopped carrot and finely chopped celery
  2. add 250ml water
  3. roast the meat to your liking
  4. remove the meat and allow to rest
  5. scrape the bottom of the pan to dislodge the dark bits
  6. if your meat pan is not suitable for use on the hob pour the juices into a pan
  7. add plain flour, stir and cook for a few minutes
  8. slowly add a good stock a little at a time keeping the liquid smooth to produce a good gravy
  9. adjust the flavour and colour by adding Old Jake's.
  10. you can add wine, redcurrant jelly and mustard.

In the good old days we had Burdall's Gravy Salt made in Wymondham, Melton Mowbray but in
December 2000 production ceased.  By popular demand Jake Young started production and I can
vouche for the fact that Jake's is a really good replacement and it's Stronger Stuff in superb.
