Fresh Tomato Puree

Ingredients

  • 200g vine ripened cherry tomatoes, halved
  • 50g butter
  • Freshly Ground salt and pepper

Method

  1. Cook the tomatoes and butter very gently over a low heat adding a little water if required.  Give it at least half an hour- the slower the better.
  2. Pass through a mouli or sieve and season well.
  3. This will keep for up to 5 days in a refrigerator or freeze.
