Method
- Soak the mushrooms in hot waster for 30 minutes or use fresh mushrooms
- Discard the mushroom stalks and thinly slice the mushroom heads
- Put the mushroooms, vinegar, sugar, water and soy sauce into a small saucepan and boil for 5 minutes
- Add the Spring Onions using most of the green portion as well.
- Blend the cornflour smoothly with the 1tbsp of cold water. and stir into the sauce.
- Cook the sauce stirring until clear and thickened.
- Remove from the heat and stir in the Ginger Powder.
- This is an excellent sauce for fried fish, roast chicken or steak.
