100% Wholemeal Bread

Ingredients

  • 500g Strong Wholemeal Bread Flour

  • 1 tsp Activated Yeast

  • 1 tsp sugar

  • 1 tsp salt

  • 350ml tepid water not to exceed 40C

  • 1 tbsp oil

  • oil, for tin

Method  - using a Kenwood Chef Major

  1. Put the flour, yeast and sugar into the bowl and mix them well together - I used the dough hook.
  2. Stir in the water, and when everything looks craggy and lumpy, mix in the salt.
  3. Mix in the oil.
  4. Need the dough for at lewast 5 minutes on Speed 2
  5. Cover the bowl with cling film and place in a fan oven on 40C setting.  I used a Panasonic Microwave Combi oven.  Allow to rise to double in size, which will take about an hour.
  6. Rub some oil around the inside of 1kg/2lb bread tin.
  7. Knead the dough for another 5 minutes.
  8. Shape the dough and put it into the prepared tin.
  9. Oil lightly one side of a piece of cling film, cover the dough and return mixture in the tin to the 40C oven and allow to rise  for 40 minutes.
  10. Pre-heat the oven. to 200C (fan assisted)
  11. Remove theclilng film and bake the loaf for 40-45 minutes.
  12. Turn the bread out of the tin, tap the base and if it sounds hollow, the bread is cooked.
  13. Leave to cool on a wire rack.
