Method - using a Kenwood Chef Major
- Put the flour, yeast and sugar into the bowl and mix them well together - I used the dough hook.
- Stir in the water, and when everything looks craggy and lumpy, mix in the salt.
- Mix in the oil.
- Need the dough for at lewast 5 minutes on Speed 2
- Cover the bowl with cling film and place in a fan oven on 40C setting. I used a Panasonic Microwave Combi oven. Allow to rise to double in size, which will take about an hour.
- Rub some oil around the inside of 1kg/2lb bread tin.
- Knead the dough for another 5 minutes.
- Shape the dough and put it into the prepared tin.
- Oil lightly one side of a piece of cling film, cover the dough and return mixture in the tin to the 40C oven and allow to rise for 40 minutes.
- Pre-heat the oven. to 200C (fan assisted)
- Remove theclilng film and bake the loaf for 40-45 minutes.
- Turn the bread out of the tin, tap the base and if it sounds hollow, the bread is cooked.
- Leave to cool on a wire rack.
