Sweet Potato Spice Muffins

 

 Ingredients

  • 150g sugar
  • 2 eggs
  • 235 ml cooking oil
  • 200g Sweet Potato, mashed or pureed
  • 190g flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1½ tsp cinnamon
  • 1 tsp allspice
  • ¼ tsp cloves
  • 1 tsp ground ginger
  • ½ tsp ground cardamom
  • 200g golden raisins, optional

 Method

  1. Using a Kenwood Chef mixer put the sugar, eggs cooking oil and sweet potato into a bowl and mix well.
  2. Sift together the flour, salt, baking powder and all of the spices and fold into sweet potato mixture.
  3. Fold in the raisins.
  4. Spoon the batter into 12 greased or paper lined muffin tins.
  5. Bake at 175C for about 20-25 minutes or until a toothpick inserted in the centre comes out clean.
