Small Cakes

2home Ingredients 4 oz Self Raising Flour
  4 oz Margarine or Butter
  4 oz Sugar
  2 Eggs

Method

Warm the bowl and beater thoroughly.  Place the butter and sugar in the bowl and cream this on speed 3 until light and fluffy.

Add the eggs a little at a time beating thoroughly after each addition.  A little flour at this stage will help to prevent curdling.

Reduce to minimum speed and add the flour and any flavouring and mix until incorporated.  A little milk to form a soft dropping consistency could be needed.

Using a cake tin for small cakes put a paper case in each and then a dessertspoonful into each case.

Bake at 350F Gas 4 for 10 to 15 minutes.  When touched the sponge should be firm.
