Sage and Onion Stuffing

 

 Ingredients

  • 250g Onion, chopped
  • 35g Butter, unsalted
  • 200g sausage meat
  • 200g chopped chestnuts
  • 1 clove Garlic, finely-chopped
  • 1 Bay leaf
  • 1 sprig Thyme leaves, chopped
  • 400g Brown bread
  • 15g Sage leaves
  • 15g Parsley leaves
  • 3 pinches salt
  • 3 pinches Freshly-ground black pepper
  • 2 Eggs, whole, medium,
  • 1 Egg yolk, medium

 

 Method

  1. Heat the butter and oil in a frying pan. Fry the onion, bay and a pinch of salt gently for 15 mins over a low heat until the onions are softened and translucent. Add the garlic and sage and fry for 1 min. Leave to cool for 10 mins.

  2. Fry the sausage meat until just brown.  Set aside to cool for 10 minutes

  3. Add the chopped chestnuts and the other ingredients and mix well.

  4. Heat the oven to 180C/160C fan/gas 4.Bake in a meat dish for 30 minutes or until well browned and crispy on top.
