pinch | Mixed Herbs | |
Salt and Pepper | ||
a little | Milk or Egg | |
1 oz | lard for baking |
Method
Mix the bread crumbs, parsley and herbs and add the melted butter and seasoning and a little egg or milk.
Clean the herrings and take out the back bones. Skin and wash and then pat dry.
Put the filling into each herring and fold over.
Put into a baking tin with the lard and place in a moderate oven for about 20 minutes. Baste a few times during cooking.
A war time recipe passed down from my mother. It was quite a rare treat to get herrings so they were made to go a little further with the stuffing made of simple ingredients available in the home.
