Ingredients

  • 4 Cod Fillets
  • 1 medium onion chopped
  • 2 garlic cloves finely chopped
  • 2 tbsp olive oil
  • 800 g can of chopped tomatoes
  • 1 tbsp capers
  • 1/4 cup of fresh basil chopped
  • 8 black olives, pitted
  • 1 tbsp lemon juice
  • 1 tsp oregano dried clumbled
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

Method

  1. Preheat oven to 230C, Gas Mark 8. Arrange fillets in 20 cms x 20 cms x 5 cms square baking dish.
  2. Saute onion and garlic in oil in medium-size skillet over medium
    heat 3-5 minutes or until lightly softened. Add tomatoes, capers,
    basil, olives, lemon juice, oregano, salt if using, and pepper.
    Simmer, stirring occasionally, 8 minutes. Spoon sauce over fish.
  3. Bake in preheated 230C, Gas Mark 8 oven for 10 minutes or until cooked
    through.
