3 Fish with courgette, fennel and new potatoes

Ingredients

  • 3 small pieces of fish
  • 6 cherry tomatoes
  • new potatoes
  • 1 courgette
  • 1 bulb of fennel
  • tin of peas
  • 10 small mushrooms

Method

  1. boil the new potatoes
  2. spin the peas in a liquidiser until smooth
  3. grill the tomatoes
  4. thinly slice the fennel 
  5. make 6 thin slices of courgette
  6. fry the fennel courgette and mushrooms until browning
  7. heat the peas in a microwave
  8. if you have purchased flat fish such as sole roll the fish around a thin (lengthways) slice of courgette
  9. fry the 3 pieces of fish - do not over cook
  10. place two swirls of peas on the plate and put the fish on top
  11. pipe blobs of peas and on each blob place a mushroom
  12. decorate the fish with tomatoes, courgette and fennel
  13. Add a few potatoes
  14. Serve with good French bread and salted butter
