Method
- boil the new potatoes
- spin the peas in a liquidiser until smooth
- grill the tomatoes
- thinly slice the fennel
- make 6 thin slices of courgette
- fry the fennel courgette and mushrooms until browning
- heat the peas in a microwave
- if you have purchased flat fish such as sole roll the fish around a thin (lengthways) slice of courgette
- fry the 3 pieces of fish - do not over cook
- place two swirls of peas on the plate and put the fish on top
- pipe blobs of peas and on each blob place a mushroom
- decorate the fish with tomatoes, courgette and fennel
- Add a few potatoes
- Serve with good French bread and salted butter
