triple cooked chips 

Ingredients

Potatoes - Maris Pipe or King Edwards 

 Method 

  1. Peel and cut the potatoes into 15mm square pieces
  2. Poach the potatoes in simmering water for 15 mins
  3. Allow to dry on a tea towell
  4. Deep fat fryer for 20 mins at 130 C
  5. Re-fry in a Deep fat fryer for 3 minutes at 190 C
