Skate Wing with caper sauce

Ingredients

  • 2 small fresh skate wings,250g each
  • 2 tbsp plain flour
  • 25g unsalted butter
  • a further 50g of unslated butter
  • Juice of 1 small lemon
  • 1 tbsp of rinsed and drained Capers
  • ½ pack fresh flat-leaf parsley, chopped
  • Salt and freshly ground black pepper

Method  

  1. Rinse the skate wings and pat dry.  
  2. Season with salt and freshly ground black peper.
  3. Lightly coat the wings with plain flour and shake to remove any excess.
  4. Melt 25g of unsalted butter in a large frying pan and fry the skate wings on medium heat for about 5 minutes each side.  The skate flesh should be firm with the skin golden.
  5. Transfer to warm plates and keep warm.
  6. With the same large frying pan add 50g of unsalted butter and cook until it turns bron and smells nutty.  Be careful that it does not burn.  
  7. Remove from the heat, add lemon juice, capers and the flat leaf parsley.  
  8. Add a little salt and black pepper.
  9. Pour over the skate wings and serve immediately with a twist of lemon.

Skate wings can be very large and relatively cheap but small ones look better on the plate.

Suggested vegetables to serve with the skate wings.  Garden peas, Samphire or Seaweed. (Not strictly a vegetable but an algae)
