Blueberry Ice Cream

Ingredients

  • 500g blueberries
  • 400 g sugar
  • 1 tbsp of vanilla
  • pinch of salt
  • 225 ml whole milk
  • 675 ml double cream

Method

  1. Puree the blueberries in a blender
  2. Put the pureed blueberries and sugar into a heavy based saucepan and heat until the sugar is dissolved
  3. Refrigerate until the mixture is cool
  4. To the cooled blueberry and sugar mixture add the vanilla essence, salt, milk and the cream.  Mix well.
  5. Pour into an ice cream maker and churn
  6. Freeze to allow the ice cream to set
