Ingredients
- Grater the lemon rind, squeeze the juice out.
- Place the lemon rind and juice into an oven proof bowl.
- Add the cubed butter.
- Lightly whisk the eggs and the yolk and stir them into the lemon mixture
- Add the caster sugar
- Cover and place in a microwave on medium heat.
- Stir from time to time to ensure the butter is melted fully.
- Allow to cool and then place in jars.
- Store in a refrigerator.
