Lemon Curd

 Ingredients

  • 4 lemons, zest and juice
  • 200g caster sugar
  • 100g unsalted butter cut into cubes
  • 3 medium eggs plus the yolk from a 4th egg 

 Ingredients

  1. Grater the lemon rind, squeeze the juice out.
  2. Place the lemon rind and juice into an oven proof bowl.
  3. Add the cubed butter.
  4. Lightly whisk the eggs and the yolk and stir them into the lemon mixture
  5. Add the caster sugar
  6. Cover and place in a microwave on medium heat.
  7. Stir from time to time to ensure the butter is melted fully.
  8. Allow to cool and then place in jars.
  9. Store in a refrigerator.
