Grapefruit Marmalade

  Ingredients 700 g Grapefruit
2 or 3 lemons
1.1 ltr water
2 kilo granulated sugar
  

Method

Peel the Grapefruit with a potato peeler and mince or slice. Remove the pith from the fruit by hand.  Cut up the fruit roughly and remove the pips.  Place the pith and the pith in a muslin bag and put into the pressure cooker along with  the fruit, mined peel and 1 pint of water.  Bring to pressure for 15 minutes and allow to reduce at room temperature.

Remove the muslin bag and squeeze well.  Add the rest of the water and bring to the boil.  Then add the sugar and stir to a fast rolling boil.  When setting point is reached allow to cool for a few minutes.  Place in clean, dry pre-warmed jam jars.  Seal and store.

When Seville Oranges were not available my mother used to make this Marmalade.  It really is delicious but only if you like grapefruit.
