Braised Beef Whirls

Ingredients

  • 4 slices of beef topside
  • 3 onions
  • 175g kidney cored
  • 1 tbsp chopped parsley
  • 25g margarine or shredded suet
  • salt and pepper
  • 6 large carrots
  • 50g fat
  • 25g flour
  • 300ml brown stock
  • garnish of chopped parsley

Method

  1. Preheat the oven to 155C, Gas Mark 2-3
  2. Halve the slices of beef, chop 1 onion and the kidney finely.
  3. Mix together the onion, kidney, chopped parsley, margarine, or suet.
  4. Divide between the pieces of meat and roll up firmly securing if necessary with a tooth pick.
  5. Peel and slice the remaining onions.
  6. Put into a casserole.
  7. Heat the fat in a pan.
  8. Coat the meat whirls in flour, seasoned with salt and pepper and toss in the hot fat until golden.
  9. Lift on top of the vegetables.
  10. Blend the brown stock with the fat in the pan.  
  11. Pour round the beef whirls.
  12. Cover the casserole and cook in the preheated oven for about two hours.
  13. Sprinkle with chopped parsley before serving.

My mother used to make this as a special treat.  We used to cause it Haggis but in fact it is nothing like Haggis and is much more delicious.  If you want to drink it with whisky then no problem.   Just make it a good whisky.
