Traditional Roast Leg of Mutton

Ingredients

  • A good sized leg of mutton with the shank removed.

Method

  1. Preheat the oven to 180C/Gas 4.
  2. Break up the shank and boil it in a pan with onions and vegetables for the gravy.
  3. Rub the joint with freshly ground black pepper and smear on mutton fat and flour.
  4. Place in a baking tray and roast for 40-45 minutes basting from time to time.
