Baked Ham (Gammon) glazed with honey, orange and ginger

Ingredients

  • 1.8 kilo smoked or unsmoked middle cut gammon
  • 1 onion stuck with 3 cloves
  • 1 bay leaf
  • 6 peppercorns
  • 300ml dry white wine
  • 40g dark brown sugar
  • 100m orange juice
  • 15ml clear honey
  • 1/2 tsp ground ginger
  • 1 tbsp Dijon mustard
  • whole cloves
  • orange slives and curly endive to garnish

Method

  1. Soak the ham in sufficient cold water to cover for 3 hours then discard the water.
  2. Place the ham, onion stuck with cloves, bay leaf, peppercors and 225 ml of white wine.
  3. Add sufficient cold water to cover and bring to the boil.  Cover the pan and boil gently for 1 hour.
  4. Make the glaze.  Place the brown sugar, 2 tbsp of the orange juice, honey ginger and mustard in a bowl and mix well.
  5. Drain the ham and discard the vegetables.  Reserve the stock for soup if it not too salty.
  6. Remove the skin from the ham, score the fat into a diamond pattern and stud with cloves.
  7. Please the ham in a baking dish and pour the remaining wine and orange juice into the pan.
  8. Cover the ham with one third of the glaze.
  9. Bake at 220C Gas Mark 6 for 45 minutes.
  10. Baste the ham withthe pan juices and glaze 3 or 4 times during cooking.
  11. Discard the pan juices and serve the ham hot or cold.  
  12. Garnish with orange slices and curly endive.
