Make your own Gammon

Ingredients

  • a good piece of boned leg pork
  • 1 ltr of water
  • 140g of salt
  • 56 g of salt petre
  • 35g of crystalized honey

Method

  1. Take a good piece of boned leg pork.
  2. Mix the water, salt, salt petre and the crystalized honey.
  3. Inject the leg pork with the mixture.
  4. Immerse in the solution.
  5. Leave for 1.5 days per inch thickness of pork.
  6. Inject with solution half way through the immersion period.
  7. Leave longer if liked.
  8. Take from the liquid, dry with cloth, almost freeze and then slice or make into joints.
  9. It will keep in the fridge for a week or more but I usually freeze it.
