Method
- Take a good piece of boned leg pork.
- Mix the water, salt, salt petre and the crystalized honey.
- Inject the leg pork with the mixture.
- Immerse in the solution.
- Leave for 1.5 days per inch thickness of pork.
- Inject with solution half way through the immersion period.
- Leave longer if liked.
- Take from the liquid, dry with cloth, almost freeze and then slice or make into joints.
- It will keep in the fridge for a week or more but I usually freeze it.
