Method
- Cream the margarine and sugar until light and fluffy. Add the eggs one by one with a little flour and beat each well until light and fluffy again before adding the next. Add a few drops of Vanilla Essence and beat in.
- Sift in the salt, plain flour and baking powder and fold in.
- Bake in a greased flan mould for 20 -25 minutes at 175 C / Gas Mark 4 or bake blind with fork pricks in the base and rice or beans for 15 mins on 190C and thenremove the rice or beans, brush with egg white and bake for a further 15 mins.
