Sponge Flan Ring

 

 

 Ingredients

  • 115 g Margarine
  • 115 g Caster Sugar
  • 3 Eggs
  • Vanilla Essence
  • pinch salt
  • 170 g Plain Flour
  • 1 tsp Baking Powder
  

Method

  1. Cream the margarine and sugar until light and fluffy.  Add the eggs one by one with a little flour and beat each well until light and fluffy again before adding the next.  Add a few drops of Vanilla Essence and beat in.
  2. Sift in the salt, plain flour and baking powder and fold in.
  3. Bake in a greased flan mould for 20 -25 minutes at 175 C / Gas Mark 4 or bake blind with fork pricks in the base and rice or beans for 15 mins on 190C and thenremove the rice or beans, brush with egg white and bake for a further 15 mins.
