Blueberry Tart

Ingredients - Pastry

8oz plain flour

1/4 teaspoon salt

2 tablespoons sugar

4oz butter, cold

1 tablespoon white vinegar

Filling

1 cup sugar

2 tablespoons flour

1/8 teaspoon cinnamon

4 1/2 cups blueberries, divided

 

This blueberry tart is so simple to make yet packs a great taste. Everyone always loves this and it is a great way to use blueberries.

SERVES 8 - 12


Directions

  1. Pre heat oven to 400°F and butter a flan ring and baking tray

  2. Combine flour, salt and sugar.

  3. Cut in the butter with pastry blender or fork.

  4. Mix in the vinegar.

  5. Line the pastry ring and base with the pastry. 

  6. For filling combine sugar, flour and cinnamon.

  7. Add 2 1/2 Cups blueberries. 

  8. Place evenly on top of crust. 

  9. Bake for 1 hour. 

  10. Remove from oven and put remaining 2C blueberries on top, lighly pressing in blueberries. 

  11. Cool completely. 

  12. Remove rim and serve from springform bottom
