Summer Pudding / Cold Fruit Pudding

 Ingredients

  1. A mixture of summer berries and rhubarb
  2. sugar
  3. Loaf of white bread sliced

Method 

  1. Lightly stew the rhubarb and then add the berries for a few minutes.
  2. Sugar to taste.
  3. Line a bowl with white bread.
  4. Ladel in the fruit and juice.
  5. Cover with bread and compress overnight under a saucer or small plate.
  6. Serve with British Double Cream and or vanilla ice cream.

 This was my favourity pudding that my mother used to make and especially my favourite when she bought Double Channel Island Cream in Barnsley.

 It is yummy.
