Basic Crepes

 

Ingredients

  • 1 cup of plain fllour
  • 2 eggs
  • 1.2 cup of milk
  • 1/2 cup of water
  • 1.4 tsp salt
  • 2 tbs butter, melted

Method

  1. Preheat the oven to 180C
  2. In a large mixing bowl whisk together the flour and the eggs.  Gradually add in the milk and water, stirring to continue.  Add teh salt and melted butter.  Beat until smooth.
  3. Heat a lightly oiled griddle or frying pan over a medium to high heat.  Pour or scoop the batter onto the griddle and spread to form a thin layer.  In the case of a pan tilt the pan so that the batter coats the surface evenly.
  4. Cook the ccrepes for about 2 minutes until the bottom is light brown.  Loosen with a spatula, turn and cook the other sdie. 
  5. Serve hot.
  6. Possible fillings are jam, lemon or orange juice and sugar, ice cream or fruit.
  7. Also rather nice served flambeed with liquour such as grand marnier, cognac etc.

We call these pancakes.  Crepes is the French name.  To be honest there is a little difference in the thickness of the product.  The French crepes tend to be thinner.
