Yanky Panky - American Pancakes

Ingredients

  • 115g plain flour
  • 3 large eggs
  • 1 tsp baking powder
  • 140ml milk

Method

  1. separate the egg yolks from the whites
  2. in a food processor or Kenwood Mixer bowl place the egg yolks, flour, baking powder and milk and mix until smooth 
  3. whisk the egg whites until until stiff peaks
  4. fold the egg whites into the yolk etc mixture and mix slowly until included
  5. melt a knob of butter on a flat pan and spoon on the mixture to cook.  Note the mixture will spread.
  6. The pan should not be too hot otherwise the pancake will be browned on the outside and uncooked on the inside.
  7. the resulting pancaks should be thicker than the traditional UK pancake or French crepes and be about 15cms across

They are good for eating with a Full English Breakfast or as a Breakfast or Snack with Maple Syrup.
