Mousse au Chocolat

Ingredients

  • 200g black desert chocolate
  • 50g butter
  • 20g caster sugar
  • 6 eggs

Method

  1. Melt the chocolate in a bowl over almost boiling water
  2. Add the butter and ensure it is fully incorporated
  3. Whisk the egg yolks with the caster sugar until light
  4. Whisk the eggs until stiff peaks are formed
  5. Incorporate the melted chocolate and butter into the egg yolks
  6. Fold in the egg whites
  7. Place in a refrigerator until set
