Method
- Peel the carrots and then using a potato peeler pare into large thick curls.
- Remove the top and base of the courgettes
- Remove the tough outer skin and thencut the flesh into thin strips.
- Slice the mushrooms thinly and put them with the other vegetables in a salad bowl.
- Mix the orange juice with the oil, salt, pepper and parsley.
- Pour the dressing over the salad, mix well together and chill for 30 minutes before serving.
