Herring and Oatmeal

Ingredients

  • 4 large herrings
  • 120 g fine or medium oatmeal
  • 60 g butter
  • 1 tbs olive oil
  • salt and pepper
  • lemon

Method

  1. Wash, gut and de-bone the herrings
  2. Sprinkle the herrings with salt and pepper and dip into the oatmeal
  3. Heat the butter and oil in a frying pan
  4. Fry the herrings 4 minutes on each side until golden brown but do not burn the oatmial
  5. Pat with kitchen paper to remove excess oil and butter
  6. Serve with lemon slices
