Aubergene and Goats Cheese

Ingredients

  • 2 large aubergines
  • 4 egg cups of olive oil
  • A sprig of Rosemary
  • A sprig of rosemary
  • 1 red onion
  • 300g small vie tomatoes
  • sufficient goats cheese to cover
  

Directions

  1. wipe the aubergines and cut into chunks
  2. cook the aubergines for approximately 15 minutes until browned but still firm
  3. cut the onion into fine slices and halve the tomatoes
  4. place the aubergine into a baking bowl
  5. add the onion and tomatoes
  6. add the sprigs of thyme and rosemary
  7. cover with goats cheese and add some more olive oil
  8. Bake in a moderate oven until brown

I was treated to this delight by a friend from the UK, Radhe with her friend John on a hot summer evening in France.  I have baked it several times since, sometimes adding smoked bacon for the non-veggies.
