4 | Large Peppers | |
1 clove | Garllic | |
salt and pepper to taste | ||
100ml | Extra Virgin Olive Oil |
Method
Cut the peppers into halves removing the seeds and the pith. Place on a baking tray and flame roast with a cook's torch.
Once roasted all over allow them to cool and then cut into chunky slices.
Place in a bowl with the old, garlic, salt and pepper. Mix thoroughly and serve with meat, pasta or as a starter. (Add fresh herbs for a delicious variation)
