Galettes

Ingredients 1 kilo Farine de Ble Noir
  1 ltr Water
  1 small handful salt
     
     

Method

Not at all a cake, a French Gallette is a savory pancake or crepe filled with egg, cheese, ham and almost anything else.

I suppose you could do this in a Kenwood Mixer but I was taught in an old mill at St Jacut Les Pins to do this using a hand washed in freezing cold water.

Put the flour in a pudding basin and slowly add the water and salt mixing as you go until it is smooth.

Cook on a pancake plate or frying pan or Galletterie.

Then fill put in the fillilng and cook and fold over.  Serve hot.

Galette seche (dry no filling not at all appetising)

Galette beurre (butteer spread on it)

Galette avec bol de lait ribot (Lait Ribot is quite disgusting to the British palet - sour cream)

Galette andouille de Guemene (Andouille is a sausage made of trip, again quite disgustin)

Galette andouille de Guemene sauce moutarde (Andouille with mustard)

Galette sucisse de campagne (served with local sausage)

Galette chevre (With goats cheese)
