Ingredients
- 250g of spaghetti
- 1 medium to large onion chopped
- 30g butter
- 2 garlic cloves squeezed
- 2 tbsp plain flour
- 125 ml double cream or creme fraiche or Elmlea
- 3 eggs llightly beaten
- 250g bacon chopped into 10mm cubes or use lardons
- 250g Parmesan Cheese

Method
- Cook spaghetti according to package directions.
- In a large frying pan or skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer.
- In a small bowl, whisk flour and cream until smooth; stir into the pan. Bring to a boil, stirring constantly.
- Reduce heat; cook and stir for 1 minute or until thickened.
- Remove from the heat.
- Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly.
- Bring to a gentle boil; cook and stir 2 minutes longer.
- Drain the spaghetti and add to the pan.
- Stir in bacon and cheese; heat through.
This is a recipe that Rodney does for me quite often. It can also be made with Salmon. It really is simple but very nice.
