Creamy Pasta with Bacon

 Ingredients

  • 250g of spaghetti
  • 1 medium to large onion chopped
  • 30g butter
  • 2 garlic cloves squeezed
  • 2 tbsp plain flour
  • 125 ml double cream or creme fraiche or Elmlea
  • 3 eggs llightly beaten
  • 250g bacon chopped into 10mm cubes or use lardons
  • 250g Parmesan Cheese

Method

  1. Cook spaghetti according to package directions.
  2. In a large frying pan or skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer.
  3. In a small bowl, whisk flour and cream until smooth; stir into the pan. Bring to a boil, stirring constantly.
  4. Reduce heat; cook and stir for 1 minute or until thickened.
  5. Remove from the heat.
  6. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly.
  7. Bring to a gentle boil; cook and stir 2 minutes longer.
  8. Drain the spaghetti and add to the pan.
  9. Stir in bacon and cheese; heat through.

    This is a recipe that Rodney does for me quite often.  It can also be made with Salmon.  It really is simple but very nice.
