Method
- mix the water and lemon juice
- fork the margarine and lard together and place in the refrigerator to chill
- alternatively use 140g butter
- shape the fat into small pieces the size and shsape of brazil nuts
- place the flour and the salt in the kenwood mixer on low speed to blend the flour and salt together
- add the fat and mix the with the flour and salt until the butter is just covered
- add the lemon juice and water and mix on low speed until incorporated
- roll out on a well floured board to a 12" x 9" shape
- mark the oblong into thirds and fold the top third over the middle third and the bottom third on top of that
- give the pastry half a turn and roll out again to 12 x 9 and follow 9 again
- repeat for a third time
- chill and use
