Stollen

mini stollen

Ingredients

  • 1/2 tsp yeast
  • 270 g strong white flour
  • 1tsp sugar
  • 30g butter
  • 1 tbsp milk powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 30g chopped almonds
  • 30g glace cherries
  • 1 medium egg
  • 100 ml water
  • 1tsp cinnamon
  • 120 g mixed dried fruit
  • 150 g marzipan

Method

  1. Using a Panasonic Bread Oven.  Put all the ingredients except the marzipan into the machine.  Note the dried fruit goes in the fruit tray.
  2. Use Raisin Dough programme. (20)
  3. At the end of the programme roll out the dough into an 8" circle and place the marzipan in the shape of a sausage along the centre of the dough.
  4. Brush the edges of the dough circle with water and fold over and seal the edges.  Place on a greased baking tray.
  5. Allow the mixture to rise again (to prove).
  6. Preheat the oven to 220C / Gas Mark 7.
  7. Bake for 15 - 22 minutes.
  8. Whilst still hot brush with melted butter and dredge with icing sugar.
  9. Allow to cool.
This cake can be frozen.  I also like to put in more dried fruit and especially candid peel than above.  An alternative is to roll out the dough and cut circles.  Stuff with the almonds and seal.  This makes mini stollens.
