Yorkshire Brack

Ingredients

  • 150 ml hot tea
  • 454 g mixed dried fruit (sultanas, raisins, currants)
  • 175 g demerara sugar
  • 1 egg, beaten
  • 225 g self-raising flour

Method

  1. Soak the mixed fruit overnight in the hot tea.
  2. Preheat the oven to 160C/GM 2.
  3. Grease and line a 2lb loaf tin.
  4. Place the mixed fruit into a large bowl. Pour over the hot tea and cover with cling film. Leave to soak overnight.
  5. Remove the cling film from the bowl and add the egg, flour and sugar. Stir well until all combined.
  6. Pour into the prepared tin and bake for 1 hour – 1 hour 20 minutes. Test with a skewer, the skewer should come out clean.
  7. Leave to cool in tin before removing and slicing. Try it with a slice of cheese like they do in Yorkshire!
