Method
- Soak the mixed fruit overnight in the hot tea.
- Preheat the oven to 160C/GM 2.
- Grease and line a 2lb loaf tin.
- Place the mixed fruit into a large bowl. Pour over the hot tea and cover with cling film. Leave to soak overnight.
- Remove the cling film from the bowl and add the egg, flour and sugar. Stir well until all combined.
- Pour into the prepared tin and bake for 1 hour – 1 hour 20 minutes. Test with a skewer, the skewer should come out clean.
- Leave to cool in tin before removing and slicing. Try it with a slice of cheese like they do in Yorkshire!
