125g Self Raising Flour
half tsp Salt
125g Fine or Medium Oatmeal
2 tsp Ground Ginger
2 tsp Cinnamon
1 Egg
65ml Milk
125g Golden Syrup
125g Trex or High Quality baking fat
125g Demerara Sugar

Method

  1. Line a greased tin with greased proof paper. 
  2. Sift the flour, salt, oatmeal, ginger and cinnamon into a bowl. 
  3. Mix well. 
  4. Beat the egg with the milk.
  5. Melt the Golden Syrup with the sugar and Trex. 
  6. Allow to cool a little and then add to the dry ingredients. 
  7. Add the beaten egg and milk. 
  8. Mix Well. 
  9. Pour the mixture into the baking tin and bake for 1 to 1 hour 15 minutes at 160C Gas Mark 3

Oatmeal seems to be very difficult to find at the moment.  Sainsbury, Tesco and Asda all used to sell it but now only Waitrose has it on the shelves and that is Alford Oatmeal Medium Grade.   At the time of writing Amazon.co.uk have McCanns Finest Steel Cut Irish Oatmeal in Tins of 793 g.  You have to buy two at a staggering price of £9.76.  Alford Oatmeal have it available at the time of writing this page at £1.50 a kilo but postage costs £7.05.
